Our Professional Cookery Level 2 course is a kitchen-based qualification where you will be preparing food for our popular East restaurant or pop-up bistro.
You will start to develop an amazing set of professional cookery skills and the knowledge to successfully work in the catering industry. Areas you will study will include:
- Preparing classic dishes with modern twists including vegan dishes, fruit and vegetable based dishes, classic dishes using meats, fish and poultry, pasta and grains, breads of the world, finishing touches with sauces, glazes and garnishes, and sweet treats including pastries, cakes and desserts.

There will also be the opportunity to start to develop your skills for upscaling for functions and events and we will connect you with local employers for work experience.
Requirements
This course is suitable for students who have achieved at least three subjects at GCSE at grade 4 or above including English and maths.
Assessment
Your practical skills will be assessed by observation while working in our popular kitchens. Class-based lessons are designed to give you the knowledge to work successfully in the industry and are tested by short answer questions.
Progression
You can progress on to Professional Cookery Level 3. You can also move into an apprenticeship or employment.
